Fruit + Mochi = Fru-chi!

The most creative and delicious ideas often come about when we give ourselves the chance to explore the “what ifs”. Wondering what if you combine something with something else, especially if nobody you know has done it before? Go ahead and try it out! For all you know, this could be the start of a fantastic and original trend! Elena, our crew member from VIVITA Korea, shares with us her experiment to combine fruits with mochi today.

How did you come up with the idea for your project?

I was wondering what it would be like if the chewy texture of the rice cakes meets the juicy texture of fruit, so I made this to try it out.

Could you share with us a bit about your prototyping process? What did you learn from the more memorable failed attempts?

It’s more delicious if you put a lot of chocolate on it!

If you leave it in the refrigerator for more than an hour after making it, the rice cake and chocolate will not separate.

Making Fru-chi

What materials do you need?

  1. 200g Glutinous rice flour
  2. 150g Dark Chocolate
  3. 8 Strawberries
  4. 100g Starch flour
  5. 2g Salt
  6. 20g Sugar
  7. 300g Hot water

What tools do you need?

  1. Microwave oven
  2. Disposable gloves
  3. Plate
  4. Bowls

STARTER ROUND:

Step 1:

Remove the tops of the strawberries, wash with water, and remove the moisture well.

(If there’s water left, chocolate won’t stick!)

Step 2:

Dissolve the chocolate in medium heat and spread chocolate on strawberry.

Step 3:

Put sugar and salt in glutinous rice flour and knead with hot water.

Cover the dough with cling wrap and make a hole in the wrap, microwave it for 1 minute, then mix evenly. Do this process three more times. You have to stir plenty of times to make sticky rice cakes!

Step 4:

Stir until it becomes a lump, and cool on starch flour. (It’s hard to touch if it’s hot!)

Step 5:

Divide the cold dough by the number of strawberries.

Place the chocolate-covered strawberries on a thinly-milled dough.

Gather the ends of the dough well.

Step 6.

Leave it in the fridge for more than an hour and eat the deliciously Fru-chi!
